🎶 From our hearts to your glasses — Sláinte!
This double distilled single malt whiskey is made in the traditional style using only the best malted barley available. The patient, yet purposeful, double distillation in traditional copper pot stills produces a complex, layered and balanced new-make spirit, which is then fully matured in a STR Portuguese Red Wine barrique. The process of the shaved, toasted, and recharred (STR) barrel was perfected by the late Dr. Jim Swan. Maturation was under the watchful eye of Dr. Graeme Macaloney, named ‘Blender of the Year’ at the 2025 Canadian Whisky Awards.
This single barrel yielded only 320 bottles, making this a very limited edition release, ‘The Unicorn’ of malt whiskies. Macaloney’s Island Distillery is Canada’s most awarded craft whisky distillery, winning 2025’s ‘Canadian Whisky of the Year’ & ‘Canadian Single Malt of the Year’ at the above awards.
Nosing & Tasting
It is best to use a Glencairn Glass or a snifter to enjoy all the nuances this dram has to offer. Better yet, pour two and treat yourself to the first one and allow a good piece of time for the other to open up.
The initial note you may get to enjoy is apple interspersed with hints of macerated cherries. Expect some subtle earthy and vegetal notes as the whisky opens further.
The arrival of maple water, demerara sugar & butterscotch will rise up both on the nose and palate as time passes. Dried fruit is a constant and the apple notes will amplify to Granny Smith variety. Hints of oak and citrus (orange peel & lemon) wander in late to the party.
Be restrained in adding water as this expression is a delight at 46% ABV.
Now give the second glass a hand warm and all the previous notes will come to life with a more rich dynamic nose and the flavour profile will even better define the word “delicious”.

A rare mythical beast, a song that magically altered our career, and now a second rare whiskey. After singing about whiskey for over 60 years, we asked our artist and friend Hamish Burgess ‘The Whisky Surfer’ to find us the perfect barrel to become‘The Unicorn’. Through 8 countries and 100 whiskey distilleries, the winding path led him back to Victoria BC, only to discover that whiskeymaker Graeme Macaloney’s ancestors were from my auld home town of Ballymena. It was meant to be. The Unicorn 2.”
